Mash your bananas with a fork. I find that the easiest way to do this is by mashing it on a wide plate because you can evenly mash every bit of the banana, and it’s much quicker than trying to mash it in a small bowl.
Add eggs to your bananas and stir to incorporate. Melt your coconut oil and add it to the banana and egg mixture. Spoon in your Greek yogurt and applesauce, and stir well until all is combined. If you're using Stevia or any other liquid sweetener, now is the time to add it.
In another bowl, add flour, baking soda, cinnamon, and salt, then stir to combine.
Add the dry mixture to your banana and egg mixture, and stir until incorporated. It should have a pancake-like consistency.
Spray your bread pan with coconut oil and spoon the bread batter into it slowly. Even it out with a spatula and bake at 375 F for about 40–45 minutes.
